How a Barbecue Competition works

A Barbecue competition is based on the ability of the teams involved, to deliver at the right doneness and perfectly dished out, at 30-minute distance from each other, the four classic categories of the American BBQ (Chicken, Ribs, Pork and Brisket) some of which require up to 24 hours of preparation. In some races it is possible that the four mandatory categories, will be joined by other ones, usually local, not influencing the final ranking. Usually a barbecue competition is attended by 20 to even 100 teams, for the most important ones. At the awards ceremony, the name of the best 10 teams in each category and in the final ranking (Overall) is mentioned from the stage, receiving the so-called Call, the best 5 are invited on stage to receive an award, the so-called Walk, while the first place was named Grand Champion and the second Reserve Grand Champion.
