Come funziona una Competizione Barbecue
Una competizione Barbecue si basa sulla capacità dei team coinvolti, di consegnare al giusto grado di cottura e perfettamente impiattati, a distanza di 30 minuti l’una dall’altra le quattro categorie classiche del barbecue americano (Chicken, Ribs, Pork e Brisket), alcune delle quali richiedono fino a 24 ore di preparazione. In alcune gare è possibile che alle 4 categorie obbligatorie, ne vengano aggiunte altre, solitamente a carattere locale, che comunque non influiscono sulla classifica finale. Ad una gara barbecue accedono solitamente da 20 fino ad anche 100 squadre, per le competizioni più importanti. Al momento della premiazione, il nome delle migliori 10 squadre per ciascuna categoria e per la classifica finale (Overall) viene menzionato dal palco, ricevendo le cosiddette Call, i migliori 5 vengono invitati sul palco per ritirare un premio, le cosiddette Walk, mentre il primo classificato viene nominato Grand Champion e il secondo Reserve Grand Champion.
